Beluga:

It is the largest fish in Iran’s inland waters and has the best caviar.

Its weighs about 1,000 kilograms and is about 100 years old.

It matures at the age of 14 to 17 and spawns every two or three years.

This fish has the best ranked caviar (Beluga caviar).

Depending on the size of the caviar spawn, if it is larger than 2.5 mm, it is called Imperial or Royal Beluga.

Ghara boron:

It is an independent species of caviar that ranks second in terms of quality.

This fish weighs about 60 to 150 kg and reaches the age of 12 to 14 and is about 1 to 2 meters long.

This type of fish is known as its Russian subspecies.

Acipencer gueldenstaedtii:

You can find this kind of fish all over the Caspian Sea and people know its caviar as golden caviar and ranks third in terms of value. It matures at the age of 12 to 16 years.

It is about 1 to 2 meters long and weighs about 80 kilograms.

Bastard sturgeon:

It is usually a migrant fish that comes to the shores of Iran for spawning.

and It has a lifespan of about 30 years and It is lightweight and has fewer spawns and is in the fourth value rank of caviar.

It is the smallest caviar fish that is fertilized at the age of 8 to 12 and It has about one-meter length and is the lightest type of sturgeon and It has small and cheaper caviar.

It difficultly and in artificial conditions reproduces, and its number is declining in nature.

 

Astra caviar comes from wild fish species, which are usually banned from export.

Baeri caviar is one of the Siberian fish, but it is an Iranian aboriginal fish.

Beluga caviar comes from Beluga fish.

Sevruga caviar comes from bastard and starry sturgeon.

Huso huso Fish

One of the best caviar fish in the world is called Beluga.

This fish produces the most expensive caviar in the world and is more economically valuable than other types of caviars.

This fish weighs about 1400 kg and can live more than 100 years.

Huso huso fish produce beluga caviar, which has a high value and price.

Of course, this fish spawns every 2 or 3 years and in Iran, Beluga fish weighing 620 kg have been caught.

Acipenser persicus, Iranian sturgeon fish

One of the best caviar fishes in the country, which is considered as an independent fish, is called Iranian sturgeon.

This fish, known as the black nose, is in second place of the world’s best caviar fishes.

There is also Russian species of this fish, but Iranian sturgeon is better than its Russian species.

The color of Persian sturgeon is dark and has white spots on its body.

The weight of this fish is about 60 to 130 kg and the length sometimes reaches 2 meters.

Acipenser nudiventris

This fish is a species of migratory fish and takes refuge in the Caspian coast for spawning and does most spawning in the rivers of the Caspian Sea.

This fish has a lifespan of 30 years and is considered a lightweight fish.

On average, about 4.5 kg of caviar is obtained from each Iranian caviar fish.

The caviar of this fish has more color variety than other species and its color range is from dark gray to light and in rare cases, it has been seen in golden color.

Iranian Astra caviar is one of the most famous and popular types of caviar in the world.

Astra caviar is smaller than Beluga and larger than Soruga.

Acipenser gueldenstaedtii (Russian sturgeon)

This species of Caspian sturgeon lives mainly in the northern parts of the sea and is highly dependent on the Volga and Ural rivers, but is also found in the southern regions.

In the north of the Caspian Sea, young fishes of this species live at a depth of 2 to 5 meters, but larger and elder fishes in the southern waters of the Caspian Sea prefer a depth range of 2 to 130 meters.

This fish goes to the Volga, Ural and Kora rivers in the north of the Caspian Sea and the Sefidrood river in the south of the Caspian Sea for spawning.

The migrations of this fish for reproduction take place in autumn and spring and its spawning peak takes place at a temperature of 21 to 25 degrees Celsius.

The average caviar yield of Russian sturgeon is about 5.3 kg.

The caviar of this fish is also offered under the name of Astra caviar.

This fish lives in the Black Sea and the Caspian Sea.

The distribution of this fish in the Caspian Sea is not uniform.

In the north of the Caspian Sea, this fish rarely goes to the Volga River for spawning and often prefers the Ural River.

This fish lives at depths of 11 to 25 meters with a water temperature of 3 to 14 degrees.

The stocks of this sturgeon in the waters of Russia, Azerbaijan and Turkmenistan have been minimized and its caviar trade is prohibited.

In Iran, several million juvenile fishes are artificially reproduced and released to strengthen the natural resources of the Caspian Sea.

The spawning time of these fishes is in April and May at a water temperature of about 10 degrees Celsius.

Males reach maturity at the age of 9 to 12 and females at the age of 11 to 16.

The average caviar extracted from this fish is about 8.4 kg.

Acipenser stellatus

This fish is the smallest species among the sturgeon of the Caspian Sea.

This fish has a unique appearance due to its long snout, and because of this long snout, it is called “Ozone Boron” in Persian. The caviar of this fish is smaller in size than other types of caviar and has a very pleasant taste.

This fish is also found in the Black and Azov Seas, but its main habitat is the Caspian Sea and is scattered in all coastal parts of the sea.

This fish enters the river in spring to spawn.

Males mature at the age of 7 to 13 years old and females at 8 to 17.

The average sturgeon of this fish is 3 kg per a year.
